This Celtic Sea Salt has been hand harvested,
selected and processed without chemicals under
the strictest biological and hygienic condi-
tions under the control of Europe's most re-
spected agency "Nature and Progress". It is
dried and milled on stones of the cooperative
salt farm and therefore has less moisture than
the Light Grey Salt. The major benefits of
fine ground salt are its high mineral content
and the important fact that there are no addi-
tivies, free-flowing agents, bleaches or alum-
minum compounds added.The higher price covers
the cost of extra handling for its careful
grading and low heat drying which is brought
to 250 degrees F. to facilitate slow grinding.
It contains more sodium than the other Crystal
Celtic Salts.

RECOMMENDED USAGE:
This salt has been fine ground for the conven-
ience of a shaker style salt. We suggest using
a non-metallic shaker adding a few grains of
toasted rice to prevent caking. Also keeps
well in a salt cellar. Salt to taste.

GSS10014 Flower/Ocean Celtic Salt 1lb 56.00
DETAILS:
Flower of the Ocean are very small, white cry-
stals that naturally form on the top of the
brine. These contain all the minerals of the
clear and clean Celtic ocean water. The flower
forms on the surface of the water, therefore,
it does not pick up any light gray color from
the clay base. It forms only at the height of
the season and its harvest requires great
skill. Traditionally Flower of the Ocean is
delicately gathered by the harvester's wife.
She often reserves it for her own usage, but
occassionally a limited stock is received for
sale. Priced higher than Fine Ground or Light
Grey, it is a very unusual and precious salt.
More than a matter of color preference, the
character of the Flower and its floating-least-
ionized, quality makes it the "feminine" or
"calming effect" Celtic salt.

All salts come from the sea, but there is a
difference! Europeans have long recognized

fits. Unlike table salt or refined sea salts,
Celtic Sea Salt is harvested by hand, with no
chemicals added and no nutrients removed. Cel-
tic Sea Salt is friendly to your body-lowest
sodium and the richest in precious minerals.
In the most pristine, wild area of the French
countryside, the paludiers of Brittany farm
salt while saving valuable resources and pre-
serving vital marshlands. These culinary salts
have their seal of identity, like vintage
cleanliness and method of salt farming without
the use of pesticides or herbicides are au-
thenticated by a group of professional inspec-
tors led by "Nature et Progres", Europe's most
diligent and prestigious consumer protection
organization.
In France and many other countries outside the
U.S., Light Grey is treasured as the finest of
all condiments. Free of any processing, it is
dried only by the hot summer's sun and wind.
It is harvested by expert saltmakers who deli-
cately gather the salt with wooden hand tools
from the eddying salt flats within the marsh.
The characteristic light grey color comes from
the pure clay soil of the manicured basins.
That clay ionizes the many mineral salts, mak-
ing them even richer in electrolytes. The cry-
stals are very carefully sifted to remove the
darker crystals. Because light grey is just
sun dried, it retains some of the ocean mois-
ture; this helps lock in many vital trace ele-
ments.
